Plum Queen Pie - a pride among summer desserts.


The plum pie is like a recipe from grandma's kitchen. Shortcrust pastry, delicate sour cream filling, and juicy plums. In season, this dessert becomes a true star at family celebrations. Easy to prepare, it will impress from the first bite, leaving behind astonished memories of a summer day.

You will need:
- 1 egg;
- pinch of salt;
- 150 g sugar;
- 8 g vanilla sugar;
- 120 g cold butter;
- 320 g wheat flour;
- 1 tsp baking powder.
For the creamy filling:
- 100 g sugar;
- 16 g vanilla sugar;
- 40 g cornstarch;
- 500 ml milk;
- 400 g sour cream;
- 1 kg plums.
Preparation method
Prepare the dough: beat the egg with a pinch of salt, regular and vanilla sugar. Add pieces of cold butter, mix. Sift flour with baking powder and knead a soft dough.
Take a rectangular form 18×28 cm, line it with parchment. Spread 2/3 of the dough into the mold evenly with your hands. Put it in the fridge for 15 minutes.
Prepare the cream: mix sugar, vanilla sugar, and starch in a saucepan. Pour in the milk and cook over medium heat until thickened, stirring constantly.
When the mixture cools down, add the sour cream and gently mix with a spatula. Pour the cream into the mold over the dough.
Cut the plums in half and place them on the cream cut side up. Grate or crumble the remaining dough on top. Bake at 180 °C for about 50 minutes until golden brown.
